Diana Lee Zadlo’s Fresh Sauce Margherita Pizza Recipe

Fresh Sauce Margherita Pizza:
1 Pizza Dough Ball
½ C Good, quality fresh packed, not from concentrate whole tomatoes
Pinch of salt
1 Bunch fresh Basil
4 Oz Fresh Mozzarella
2 T Olive Oil
Easy Raw Sauce:
1 28 oz can of Good, quality fresh packed, not from concentrate whole or crushed tomatoes
3 TB Olive Oil
½ TB sugar
1 Tsp Diamond Crystal Kosher Salt
1 Garlic Clove, Minced
1 TB quality dried oregano
Optional pinch of red pepper flakes or basil
If your tomatoes are whole, you can blitz them lightly with an immersion blender or pulse in a food processor, Then add all of your ingredients and stir to combine. You are ready to pizza!
Thick Cooked Down Sauce:
Same as above but once your sauce is mixed, add it to a sauce pan and bring it to a low simmer. Let this cook down and reduce for 20 mins. Cool and you are ready to pizza!
