Spicy Boy’s Jambalaya Recipe

Jambalaya

Ingredients:

  • 1/2 lb tasso ham
  • 1 lb andouille sausage
  • 3 lb chicken thigh
  • 1 medium yellow onion
  • 1 large red bell pepper
  • 2 jalapeno
  • 4 celery stalk
  • 12 clove garlic
  • 2 bunch green onion
  • 3 tablespoon cajun seasoning
  • 4 teaspoon oregano
  • 2 teaspoon sage
  • 6 bay leave
  • 2 tablespoon vegetable oil
  • 3 tablespoon butter
  • 2 quart homemade chicken stock
  • 1 10.5oz can cream of celery soup
  • 1/4 cup worchesterchire sauce
  • 2.5 cup cleaned rice

Instructions:

  1. Add vegetable oil to hot cast iron ductch oven
  2. Brown tasso ham and andouille sausage
  3. Reserve ham and sausage
  4. Deglaze with 1/4 cup stock
  5. Brown chicken
  6. Reserve chicken
  7. Deglaze with 1/4 cup stock
  8. Add 3 tablespoon butter- Add onion and saute until translucent
  9. Deglaze with 1/4 cup stock and cook until liquid evaporates (5 minutes)
  10. Add peppers and celery and saute additional 5 minutes
  11. Add garlic and green onions and saute additional five minutes
  12. Add spices and cleaned rice. Toast rice for several minutes while stirring continuously.
  13. After spices become aromatic, add cream of celery soup, worchesterchire, and 5 cups chicken stock
  14. Cover and cook on low heat for 35 minutes
  15. Cut heat and leave covered for 10-15 minutes
  16. Fluff rice and transfer to serving dish (jambalaya will over cook in original dutch oven)
  17. Garnish with additional green onion or parsley
