Spicy Boy’s Jambalaya Recipe

Jambalaya
Ingredients:
- 1/2 lb tasso ham
- 1 lb andouille sausage
- 3 lb chicken thigh
- 1 medium yellow onion
- 1 large red bell pepper
- 2 jalapeno
- 4 celery stalk
- 12 clove garlic
- 2 bunch green onion
- 3 tablespoon cajun seasoning
- 4 teaspoon oregano
- 2 teaspoon sage
- 6 bay leave
- 2 tablespoon vegetable oil
- 3 tablespoon butter
- 2 quart homemade chicken stock
- 1 10.5oz can cream of celery soup
- 1/4 cup worchesterchire sauce
- 2.5 cup cleaned rice
Instructions:
- Add vegetable oil to hot cast iron ductch oven
- Brown tasso ham and andouille sausage
- Reserve ham and sausage
- Deglaze with 1/4 cup stock
- Brown chicken
- Reserve chicken
- Deglaze with 1/4 cup stock
- Add 3 tablespoon butter- Add onion and saute until translucent
- Deglaze with 1/4 cup stock and cook until liquid evaporates (5 minutes)
- Add peppers and celery and saute additional 5 minutes
- Add garlic and green onions and saute additional five minutes
- Add spices and cleaned rice. Toast rice for several minutes while stirring continuously.
- After spices become aromatic, add cream of celery soup, worchesterchire, and 5 cups chicken stock
- Cover and cook on low heat for 35 minutes
- Cut heat and leave covered for 10-15 minutes
- Fluff rice and transfer to serving dish (jambalaya will over cook in original dutch oven)
- Garnish with additional green onion or parsley
