Shrimp and Grit Entrée
Ingredients:
- Jumbo Shrimp
- Tasso Ham Gravy
- Peppers
- Onions
- Stone Ground Grits
- 9 ea. Shrimp (16/20)
- 1 oz. Red Pepper, Juliene
- 1 oz. Green Pepper, Julienne
- 2 oz. Onion, Yellow, Julienne
- 3 fl. oz. Tasso Ham Gravy
- 4 fl. oz. Heavy Cream
- 1 oz. Butter, Unsalted
- 2 tsp. Salt and Pepper Mix
- 1 fl. oz. Oil, Blend
- 6 oz. Pepperjack Grits
- 1 tbs. Green Onion, Minced
Instructions:
- Add oil, heat, peppers and onions, then sweat for 1 min
- Add shrimp, tasso and cream, and reduce finish with butter
- Serve over grits in a bowl, with shrimp fanned around grits
