Nelson Green Brier’s Schnitzel & Herb Spätzle Recipes

Schnitzel

Ingredients:

  • Niman Ranch
  • Pork Loin
  • AP Flour
  • Whisked Whole Eggs
  • Panko Breadcrumbs
  • Red Cabbage
  • Cider Vinegar

Directions:

  1. Butcher the pork loins into individual chops
  2. Using a meat tenderizer, pound the chops until they are about ½ in thick
  3. Bread the chops by covering them in AP flour, then submerging them in the eggs then covering in panko
  4. Fry at 350 degrees until golden brown
  5. Serve on a bed of Cider Braised Cabbage and Herbed Schnitzel

Herb Spätzle

Ingredients:

  • 13.5 Cups AP Flour
  • 18 Eggs
  • 2 Teaspoon Salt
  • 4.5 Cups Milk
  • 1 Cup Chopped Parsley

Directions:

  1. Put all dry ingredients in mixing bowl and mix by hand, adding parsley last
  2. Let rest for 1 hour
  3. Add flour until right consistency
  4. When pressing, make sure water is gurgling but not rolling. If needed, start over with fresh water
