Nelson Green Brier’s Schnitzel & Herb Spätzle Recipes

Schnitzel
Ingredients:
- Niman Ranch
- Pork Loin
- AP Flour
- Whisked Whole Eggs
- Panko Breadcrumbs
- Red Cabbage
- Cider Vinegar
Directions:
- Butcher the pork loins into individual chops
- Using a meat tenderizer, pound the chops until they are about ½ in thick
- Bread the chops by covering them in AP flour, then submerging them in the eggs then covering in panko
- Fry at 350 degrees until golden brown
- Serve on a bed of Cider Braised Cabbage and Herbed Schnitzel
Herb Spätzle
Ingredients:
- 13.5 Cups AP Flour
- 18 Eggs
- 2 Teaspoon Salt
- 4.5 Cups Milk
- 1 Cup Chopped Parsley
Directions:
- Put all dry ingredients in mixing bowl and mix by hand, adding parsley last
- Let rest for 1 hour
- Add flour until right consistency
- When pressing, make sure water is gurgling but not rolling. If needed, start over with fresh water
