Butternut Squash Salad Boats: Serves 2
Ingredients:
- 1 Butternut Squash
- 2 tbsp pumpkin seeds
- ½ sliced apple
- 2 cups Lettuce greens
- 2 tbsp chopped pecans
- Sprinkle of goat cheese
- 1 cup cooked farro
- 2 tbsp dried cranberries
- 1 cup roasted butternut squash cubed
Autumn Salad Dressing Recipe:
Ingredients:
- 6 Tbsp extra virgin olive oil
- 4 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1-2 cloves of minced garlic
- Stir well until blended and pour over salad
