etch’s Feta Filo Clutch Recipe

Ingredients:

  • 8 oz Monterey jack cheese, shredded
  • 4 oz feta cheese, crumbled
  • 12 oz can chickpeas, drained
  • 2 T harissa spice
  • 24 sheets filo dough
  • 8 oz butter, melted 

Directions:

  1. Combine the cheeses, chickpeas, and harissa spice in a bowl.
  2. Cut filo dough in half while still in the plastic wrapper.
  3. Lay out one sheet of the dough, brush with butter, lay another sheet on top.
  4. Place 1/3 c of the cheese mixture at the base of the filo layers, fold up like an envelope.
  5. Cook on a griddle or in the oven at 375 until golden brown and crisp.
