etch’s Feta Filo Clutch Recipe

Ingredients:
- 8 oz Monterey jack cheese, shredded
- 4 oz feta cheese, crumbled
- 12 oz can chickpeas, drained
- 2 T harissa spice
- 24 sheets filo dough
- 8 oz butter, melted
Directions:
- Combine the cheeses, chickpeas, and harissa spice in a bowl.
- Cut filo dough in half while still in the plastic wrapper.
- Lay out one sheet of the dough, brush with butter, lay another sheet on top.
- Place 1/3 c of the cheese mixture at the base of the filo layers, fold up like an envelope.
- Cook on a griddle or in the oven at 375 until golden brown and crisp.
