Smoked Beef Cheeks

Ingredients:

  • 8 Beek Cheeks Membrane removed
  • Dry Rub
  • 1 tbsp of cumin
  • 1 tbsp of Hungarian Paprika
  • 1 tbsp Of Brown Sugar
  • 1 tbsp Of Dried Garlic
  • 1 tbsp of Dried onion
  • 1 tbsp of Dehydrated Tomato Powder

Instructions:

  • Set smoker to cook at 275°F/135°F
  • Prepare beef cheeks by trimming silver skin and excess fat
  • Combine beef rub ingredients and apply generously to beef
  • Apply on underside too, and work into crevices
  • Transfer to smoker racks
  • Close lid/door and leave to smoke for 4 hours

Guava BBQ

Ingredients:

  • 1 cup guava paste cut in cubes
  • 1/3 cup apple cider vinegar
  • 1/4 cup spiced rum
  • 3 tablespoons tomato paste
  • 3 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1 clove garlic minced
  • 1/4 cup water
  • Salt and pepper to taste

Instructions:

  • Combine and simmer in a small saucepan for 5 minutes

Plantain Cornbread

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 ripe mashed plantains
  • 1/2 cup coconut milk
  • 1/4 cup unsalted melted butter
  • Optional: a pinch of Caribbean spices (nutmeg, cinnamon, or allspice)
  • Optional: 1/4 cup grated coconut

Instructions:

1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or line it with paper liners.

2. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Give it a good stir, ensuring all the dry ingredients are well incorporated.

3. In a separate bowl, mash the ripe plantains until they form a smooth puree.

4. Pour the mashed plantains, coconut milk, and melted butter into the dry ingredient mixture.

5. Spoon the batter into the prepared muffin tin

6. Place the muffin tin in the preheated oven and let the magic happen. Bake for approximately 18-20 minutes or until the tops are golden brown.
